David Mendelsohn

David Mendelsohn is currently the Group R&D Manager at Kepak Group, where responsibilities include shaping and executing the Research and Development agenda for the Red Meat & Foods Retail and Food Service divisions. Prior to this role, David served as the R&D Manager for Alternative Proteins at Dawn Farms. David's experience at Kerry Group encompassed several positions, including Science & Innovation Customer Manager, Science & Innovation Project Manager, and RDA Technologist, focusing on the development of functional food ingredient systems. Additionally, David held the position of Senior Regulatory Information Officer, overseeing regulatory affairs across Dairy & LETS in EMEA. Early career experiences include Technical Information Officer at Dairygold Food Ingredients and a Junior IT Technician role at Associated British World Foods. David holds a Master of Science in Food Business Strategy from UCD Michael Smurfit Graduate Business School and a BSc in Food Science and Health from the University of Limerick.
