Currently serving as Head Chef at KISUME under LUCAS Restaurants since April 2017, Yong has also held the position of Senior Sous Chef at the same venue. Prior to this, Yong accumulated valuable experience as Chef De Partie at Circa, The Prince, and Kenzan Japanese Restaurant, and was Head Chef at Komeyui Japanese Restaurant. Earlier career milestones include roles as Chef De Partie at Space Joy Dining in Tokyo and Commis Chef at ARIAKE Japanese Restaurant in Seoul, alongside service as a Chef in the Republic of Korea Army.
