Niamh Fitzsimons is a seasoned financial professional with extensive experience in accounting and finance. Currently serving as a Financial Accountant at Manor Farm since January 2023, Niamh previously held positions as an Accountant at Pinnaklo Ltd from November 2021 to December 2022 and as Finance Manager at SIAC Construction Ltd from November 2007 to May 2013. Niamh's career began at PwC as an Assistant Manager in the Consumer, Industrial, Products & Services Group from September 2006 to October 2007, followed by a role as Assistant Manager & Audit Senior at Newmarket Partnership from September 2002 to June 2006. Niamh's educational background includes a Bachelor's degree in Finance and Economics from Maynooth University and professional qualifications from Chartered Accountants Ireland.

From the humble beginnings of Manor Street in Dublin’s North Inner City in 1775, to the rich green pastures of County Cavan, there’s one family that's always been at the forefront of great tasting Manor Farm Irish chicken. The Carton family is proud of their chicken tradition; after all, it’s been going for over eight generations now! That’s nearly 250 years of passion, knowledge, expertise and skill. But it’s not just the family, it’s the generations of people who work with Manor Farm, the farmers who rear the chickens, they’re all part of this great tradition too. And the company has been rewarded through the years with a multitude of awards to make Manor Farm synonymous with the best in Irish chicken. In 1956 Manor Farm introduced the chicken as we now know it today into Ireland. Chicken was now more accessible to more people and quickly became very popular. The original factory for the company was still in the heart of Dublin located in the Market area but moved in 1970 to a custom built factory in the heart of Cavan at a small village called Shercock on the shores of Lough Sillan.
