Wilmar Nolasco

Mixologist at Merchants Hospitality

Wilmer Nolasco has over a decade of experience working in the hospitality industry. After breaking into the industry by opening Eataly, he eventually moved behind the bar with the opportunity to bartend under the Fatty ‘Cue bar program. After mastering restaurant bars, Wilmer made the switch to cocktail bartending, working through notable bar programs across the city. His passion for drink making came to fruition during his tenure at Bathtub Gin, where he became a major contributor to their seasonal cocktail program.

Driven, and guest minded, with a focus on educating his bar teams and mentoring the next era of cocktail bartenders, Wilmer made the leap to leadership as Bar Director for Grand Army, a nationally recognized bar in Beorum Hill, Brooklyn, and most recently as Head Bartender for The Lamb’s Club in Midtown Manhattan. You’ll now find him passionately creating your new favorite cocktail at the various bars in the Company’s portfolio.
