Brian Elledge is an experienced culinary professional with a career spanning over three decades. Currently serving as the Executive Room Chef at Mandalay Bay Resort & Casino since 2008, Brian oversees the management of approximately 4,500 rooms, focusing on labor and cost control as well as menu planning and development. Additionally, Brian holds the position of Executive Room Chef for In-room Dining at MGM Resorts International since 2008 and previously worked as a Sous Chef in In-Room Dining at Caesars Palace from 1984 to 2008. Earlier in Brian’s career, from 1996 to 2001, Brian served as Sales Manager and Promotions Manager at Staz's Nevada Indian Motorcycle Company. Brian completed education at Basic High School.
