Adeline Bailly is an experienced professional specializing in information systems and environmental economics. Currently serving as the Responsable Système d'Information at Moulinot since September 2022, Adeline previously worked as a consultante-développeuse at ALLOHOUSTON. Prior roles include Directrice de production and Directrice adjointe de production at BALUCHON - A TABLE CITOYENS, and Ingénieur d'Etudes at CITEPA, contributing to national greenhouse gas emission inventories and developing optimization tools for emission reductions. Adeline has also gained experience as a stagiaire in natural resource management at the University of the South Pacific and in environmental sociology at CSIRO. Academic qualifications include a Master’s degree in sustainable development economics from AgroParisTech.

Moulinot is a Solidarity Company of Social Utility (ESUS) which creates high-quality compost and energy from food waste.Its founder, Stephan Martinez, was born and raised in the kitchens of Parisian restaurants. Himself a chef, like the previous generations, he found out that:- in the absence of any sorting and a specific collection, food wasteis systematically buried or incinerated- our soil is so depleted that crops simply cannot grow without prior fertilizingFrom his observations, he extracted a simple principle that laid the basis for Moulinot: "That which comes from the earth must return to the earth." In 2007, he became a master composter and the first chef to use earthworms to transform his food waste. He then inspired many others to follow his steps.Moulinot Compost & Biogaz was launched in 2013. The tailor-made ESS solution enables all sectors of the catering industry to comply with the law, which requires them to transform their food waste. This solution fits perfectly into the circular economy and plays a major role in Sustainable Development thanks to its 3 parts:- Support and implementation of a customized sorting solution- Collection of bio-waste by environmentally friendly and innovative vehicles- Transformation of this food waste into compost and energy.
