Rommel Simpauco has a diverse work experience in various roles within the hospitality and retail industries. Rommel began their career in 2000 as a Food & Beverage Storeroom Clerk - Purchasing at Pebble Beach Resorts, where they worked until 2006. During this time, they also served as a Materials Runner at Bellagio from 2006 to 2007 and as a Shipping & Receiving Associate at Nike from 2006 to 2007. Rommel then returned to Pebble Beach Resorts in 2008, where they held roles such as Lead Purchasing Clerk (Special Events), Food & Beverage Storeroom Clerk - Purchasing (The Inn at Spanish Bay), and Assistant Storeroom Manager - Purchasing (The Inn at Spanish Bay). Rommel'smost recent role is as a Food & Beverage Cost Control Analyst, which they started in August 2022.

Rommel Simpauco completed an Associate of Science degree in Hospitality Operations from Monterey Peninsula College in 2015. In September 2016, Rommel obtained a certification as a Certified Sommelier from the Court of Master Sommeliers, Americas.
