Mathieu Lepoittevin Les Vallées is an accomplished operations director with extensive experience in the food and hospitality industry. Currently serving as the Operations Director at Poke House since February 2025, Mathieu previously held regional director positions at HUTTOPIA and Boulangerie Feuillette, as well as the Operations Director role at Maison Kayser México, where 40 establishments were successfully launched within six years, achieving an annual revenue of $33 million in 2019. Earlier experience includes managing the Louvre - Palais Royal bakery for Maison Kayser France and leading the Champs-Élysées location of Brioche Dorée to become the top sales restaurant in France within a year.
