Mason Fillmore is an accomplished culinary professional with extensive experience in restaurant management and kitchen operations. Currently serving as Area Manager at Pork Barrel BBQ since February 2024, Mason is involved in the launch of a new restaurant concept within the homegrown restaurant group, focusing on a kettle pot and oyster bar. Prior to this role, Mason dedicated nearly five years to Whiskey and Oyster, holding positions including General Manager, Executive Chef, and Sous Chef. Additionally, Mason has held Sous Chef roles at The George Town Club and Hilton Alexandria Mark Center, as well as serving as Banquet Chef. Mason is a graduate of the University of Iowa, having completed a degree from 2007 to 2011.

Pork Barrel BBQ is a national award winning barbecue company located in Alexandria, VA. Our line of products include four BBQ Sauces (Original, Sweet, Mustard & Carolina Vinegar), three Spice Rubs (All-American All-Purpose Rub, Citrus Poultry Rub, & Steak Rub) and five flavors of Bacon Jerky (Sriracha, Maple, Honey Pepper, Original BBQ & Sweet BBQ). Our products have won numerous awards including our BBQ Sauces being named the best BBQ Sauce in the nation by Men's Health Magazine, Country Living Magazine, & Cook's Illustrated. In November 2011 we opened the first Pork Barrel BBQ Restaurant in the Del Ray neighborhood of Alexandria, VA. Our menu includes pulled pork, brisket, chicken, ribs, sausage and sides that include coleslaw, baked beans, collard greens, mac & cheese, cucumber salad, Texas caviar & potato salad. Food & Wine magazine named us one of the Best BBQ restaurants in American in their June 2012 issue. In June 2009 the Pork Barrel BBQ professional competition barbecue team was formed and has won numerous honors at barbecue contests across the country. In 2011 & 2014 we were named Grand Champions of the Safeway National Capital Barbecue Battle in Washington, DC and the Perdue National Chicken Champions. We have also had the honor to cook the most prestigious contests in all of barbecue - Memphis in May, the American Royal, The Jack Daniel's World Championships and the Sam's Club National Finals.
