Jose Paz Amaya currently serves as Chef De Cuisine at Rumi's Kitchen, where responsibilities include being the opening chef for the establishment's first location in Washington, D.C., since July 2019. Prior to this, Jose held various leadership positions within the Hillstone Restaurant Group from February 1999 to March 2019, with roles ranging from Culinary Manager at Houston's in Memphis, overseeing kitchen operations that generated over $8.3 million annually, to Assistant Culinary Manager at multiple locations. Initial experience included roles as Line Cook, Prep Cook, and Sous Chef, showcasing a commitment to quality and operational excellence throughout a career spanning over two decades.
