Carlotta Paolini

Carlotta Paolini is an accomplished hospitality professional with extensive experience in restaurant and store operations. Since March 2017, Carlotta has served as the Director of Store Operations at Eataly, overseeing various managerial roles within the company. Prior to Eataly, Carlotta was the General Manager at Osteria del Principe, where responsibilities included managing a 110-seat property and all aspects of event management. Carlotta also co-owned Antica Trattoria Le Barettine, where operations and community marketing were key focuses. Early career roles included serving as Captain at Dama Bianca and Al Bagatto. Carlotta holds a high school degree in Psychology and Sociology from Istituto Magistrale G.Carducci in Trieste, Italy.
