Derek Olker is a seasoned professional with extensive experience in the hospitality and food service industry. Currently serving as Business Analyst II at Seminole Casino Coconut Creek since December 2021, Derek has held various managerial positions including Deli Manager and Restaurant Manager at Shake Shack. Previously, Derek worked at Seminole Casino Coconut Creek in multiple roles from 2012 to 2021, such as General Manager and Floating F&B Manager, where notable achievements include facilitating the relaunch of the Fresh Harvest Buffet and assisting with the opening of the renovated Guitar Hotel at Seminole Hardrock Hotel and Casino.
