Adam Wills has worked in the food and hospitality industry for over two decades. In 1997, they were the General Manager at The Student Support Ce. In 2000, they founded Gourmet Burger Kitchen with Brandon Allen and Greg Driscoll, opening 10 successful restaurants in London in 5 years and creating a brand new sector in the London restaurant market. In 2010, they were a Director at Seven Restuarants Ltd, where they were part of a joint venture with Peter Gordon, Michael McGrath and Brandon Allen. This venture, Kopapa, was recognised as one of the top 50 places to eat in London by Time Out Magazine 2011 and was always ranked as one of London's top brunch restaurants, winning awards with Time Out and The Huffington Post in 2013. In 2013, they became Co-Founder and Director of Crosstown Doughnuts & Coffee, a sweet treat brand that manufactures, retails and wholesales artisan doughnuts, cookies, small batch ice cream & chocolate bars in London. In 2016, they became a Director at Slerp, an on demand delivery for businesses in London.

Adam Wills attended St Patricks College, Silverstream from 1982 to 1986, and then went on to complete a NZ Diploma in Business Studies at Otago Polytechnic from 1990 to 1992.
