Shaji Payyannur is an experienced culinary professional with a strong background in food production and kitchen management. Currently serving as Executive Head Chef at Sweetheart Kitchen since September 2019, Shaji utilizes advanced cooking techniques and a data-driven approach to deliver high-quality food. Concurrently, Shaji holds the position of Executive Sous Chef at Royal Catering Services L.L.C., overseeing pastry and Indian kitchen operations, outdoor functions, and quality assurance. Previous roles include various positions at Emirates Flight Catering from 2003 to 2015, culminating as Sous Chef, and a foundational career at Abela & Co from 1995 to 2003.
