Erin Copa is a Lead Strategist in the Food & Beverage sector, currently pursuing a Bachelor of Arts degree with an emphasis in Writing and Spanish at the University of Saint Thomas. Previously, Erin served as a Senior Licensing Analyst at Target, where they oversaw the application process for over 20,000 operational licenses and played a critical role in the CVS merger. Other roles included positions in New Store Development and Operations, along with legal support as a Senior Legal Assistant/Paralegal at Nichols Kaster, PLLP. Erin also gained coaching experience with the Team Gilboa Alpine Ski Team, instructing and mentoring young athletes.
