In the role of R&D Manager, Juan Fletes focuses on developing and implementing new products, researching ingredients, and supporting operational activities, along with overseeing the R&D laboratory. As a Production Manager at Bimbo Bakeries, responsibilities include coordinating production department activities to meet goals related to food safety, employee safety, product quality, and environmental compliance, while ensuring efficient production practices. Educational qualifications include a degree in Food Engineering from Instituto Tecnologico del Mazatlán, along with degrees in Baking Science and Technology from the American Institute of Baking, and Artisan Bread from the San Francisco Baking Institute.
