Beth Struckell

Beth Struckell, PhD, serves as a Faculty of Management and Strategy at the University of North Carolina Wilmington since January 2020 and co-founded 100 Women at UNC Kenan-Flagler in July 2019. Previously, Beth held the position of Clinical Professor of strategy and entrepreneurship at the University of North Texas from August 2018 to January 2020, after successfully defending a dissertation on Organizational Ambidexterity. Beth's entrepreneurial journey includes founding and expanding Equilibrium Weight Loss and Longevity into 10 locations across five states, and a distinguished 25-year career at PepsiCo, where Beth held senior executive roles, including Senior Vice President and General Manager of Foodservice and Vending Sales. Academic credentials include a PhD in Management - strategy from the University of North Texas, an MBA from UNC Kenan-Flagler Business School, and a BA in Pre-law (magna cum laude) from the University of North Carolina Wilmington.
