Larry J. Lavalley

Corporate Director Of Food & Beverage at Urgo Hotels & Resorts

Larry is spearheading Urgo Hotels and Resorts’ push to become the leading food and beverage hospitality management company as it continues its rapid expansion into managing full-service hotels and resorts.

He was tapped by the corporate team following a seven-year tenure at the Urgo-managed Palm Beach Marriott Singer Island Resort & Spa in South Florida. As assistant general manager and director of food and beverage, he rebranded and transformed the resort into one of Palm Beach County’s finest and a destination for local foodies.

Larry originally joined the resort as executive chef in 2010 to open the critically acclaimed 3800 Ocean restaurant. Before that, as director of operations for DMR restaurant group, he oversaw an impressive portfolio of restaurants including The Office, Vic and Angelo’s, and DeVito South Beach, among others.

Earlier in his career, Larry honed his skills with French Master Chef Jean Michel Bouvier and James Beard award-winning Chef Mark Militello. He was ranked top in his class at The Culinary Institute of America in Hyde Park, during which time he spent weekends with culinary greats like Daniel Boulud, Rocco Dispirito, Rick Moonen, Marcus Samuelsson and David Bouley.
