Brent Pollock has a diverse and extensive work experience in the food industry. Brent started their career in 1993 as a General Manager and Executive Chef at Gordon Biersch Brewery Restaurant. Brent then worked as an Executive Chef at Restaurant LuLu from 1999 to 2003. In 2003, they briefly served as an Executive Chef at Constellation Concepts/California Cafe and later joined Pacifica Seafood Restaurant as an Executive Chef until 2005.

From 2005 to 2010, Brent worked as an Executive Chef and Food & Beverage Director at Mountain View Country Club. Brent then joined Kaiser Restaurant Group as an Executive Chef for Jackalope Ranch and GRiND BrGr Bar from 2010 to 2011. In 2011, they became the Executive Chef at The Lakes Country Club until 2013.

From 2013 to 2017, Brent worked at Bon Appétit Management Company, first as a Resident District Manager and later as a District Manager. Brent'smost recent role is as the Regional Director of Operations at Wolfgang Puck Catering, a position they have held since 2023.

Brent Pollock attended California Culinary Academy from 1992 to 1993, where they pursued a degree in Professional Chef Studies. Brent later attended California State University, Fresno, and obtained a Bachelor of Science degree in Construction Management.
