Trenton Wilzer-Jones is an accomplished General Manager and Sommelier with extensive experience in managing restaurant operations. Since October 2017, Trenton has been leading Chop Steakhouse & Bar, overseeing daily operations and catering services for the Sandman Hotel. Prior to this role, Trenton served as General Manager at Service Inspired Restaurants (SIR Corp.) from May 2014 to October 2017, managing a team of up to 100 individuals. Between May 2011 and April 2014, Trenton held the position of Multi-Unit General Manager/Sommelier for Ottawa Venues, overseeing 225 staff across multiple locations. Educational qualifications include a Diploma in Wine & Spirits from Algonquin College of Applied Arts and Technology and a Level III Diploma from the Wine & Spirit Education Trust.
