Paolo Colavita has held several key positions throughout their work experience. Paolo started their career as the owner of COLAVITA S.P.A. in 2013. In 2021, they became a board member of Italian Community Services. In 2022, they joined Colavita USA as the Vice President of Operations for Colavita California. Currently, Colavita serves as the Chief Executive Officer of O Olive Oil & Vinegar, starting in 2023.

Paolo Colavita has a diverse education history that includes various fields of study. In 2006, they attended the University of California, Berkeley, where they completed a summer school program in English Literature, focusing on the general study of English language and literature. From 2008 to 2011, Paolo pursued a Bachelor's Degree in Political Science & International Relations at Luiss Guido Carli University. Their coursework focused on political science and government. Following that, from 2011 to 2013, they continued their studies at the same university and obtained a Bachelor's Degree in Business Management, with a concentration in business, management, marketing, and related support services. In 2014, Paolo attended the University of Washington for a summer school program in Digital Sound, specializing in the foundations of digital sound for digital arts applications.

Colavita USA

Before Colavita USA became one of the best-selling Extra Virgin Olive Oils in America, Colavita was a small family business on the opposite side of the ocean. A long time ago in the quaint hilltop village of Sant'Elia a Pianisi, located in the Molise region of Italy, two small family businesses were born. One family operated a stone mill for crushing homegrown olives used to produce fine extra virgin olive oil. The other family gathered the durum wheat harvest, milled the wheat into semolina grain and ultimately produced fresh pasta for the local market. Over time, both families became experts at their trade, passing their knowledge to the next generation, who in turn did the same. The two families had much in common not only in perfecting time-honored production methods, but also in name. They were both Colavita families. Today, the Colavita Olive Oil and Colavita Pasta companies are still family-owned and operating in the same town of their ancestors. They have since joined with another family-owned company, Colavita USA, and together they have shared the fruits of their respective crafts with American consumers for over twenty years.
