Ruairi Gilles

Ruairi Gilles is an experienced hospitality professional with a strong background in operations and beverage management. Currently serving as the Chief Operations Officer and Director of Beverage at Crawford's Social since January 2023, Ruairi also operates as the Founder and Senior Consultant at Distilled Truth Hospitality since August 2020. Ruairi has been the Creator, Host, and Producer of the Bonneville Cocktail Collection, a successful YouTube channel with 120,000 subscribers, since July 2014. Previously, Ruairi founded and managed the East London pub and bar group, Seven-Eighths, from 2010 to 2021. Other notable roles include Beverage Director at Soho House & Co and General Manager at Match Bar, along with earlier experience as Assistant Director Of Operations at Greenwich Inc.
