Almir da Fonseca

Chef Instructor / Culinary Arts Professor at The Culinary Institute of America

Almir da Fonseca has extensive experience in culinary education and entrepreneurship. Since February 2007, Almir has served as a chef instructor and culinary arts professor at The Culinary Institute of America, holding positions in the culinary arts department and as the executive chef for the Wine Spectator Greystone Restaurant for over three years. Almir also contributes to the institute's consulting and custom classes departments. In addition, Almir owns and operates Flavor Source / Fonte Sabor Gastronomy Services, established in June 1991, which focuses on the culinary research of Latin flavors, particularly Brazilian cuisine, and is home to The Brazil Project, a comprehensive exploration of the region's cooking techniques and ingredients.
