Rikke Dalsted has diverse work experience in various organizations. Rikke has worked as the Head of Health Clinics for Undocumented Migrants at Danish Red Cross since 2020. In 2018, they became a Censor at the University of Southern Denmark and worked until 2021. Also in 2018, they worked as an Independent Consultant, specializing in designing assessments and interventions that consider cultural aspects and local challenges, as well as promoting collaboration across professions and sectors. From 2016 to 2018, they were an Associate Professor at Copenhagen University College, focusing on global nutrition and health, inter-professional collaboration, and cultural sensitive health promotion. Prior to that, they worked as a Special Education Teacher at Metropolitan University Copenhagen, teaching health care professionals about collaboration in patient trajectories. Rikke also served as a Ph.D. fellow at the university. Additionally, they have held consultancy roles at Professionshøjskolen Metropol, where they focused on integrated health care systems, global health, food security, and interdisciplinary collaboration. Rikke has also worked as a Health Delegate at the International Committee of the Red Cross and as a Development and Training Specialist at Médecins Sans Frontières Belgium. In 2013, they worked as the Assistant Director of Science & Health Programs at DIS – Danish Institute for Study Abroad.

Rikke Dalsted has an extensive education history. In 1994, they obtained a Registered Nurse (RN) degree from Metropolitan University Copenhagen. Later, from 1998 to 2006, they pursued their Bachelor's degree in Sociology at the University of Copenhagen. In 2004, Dalsted attended Copenhagen Business School for a Project and Innovation Leadership Course, specializing in innovation and leadership. Continuing their studies, they obtained a Doctor of Philosophy (PhD) degree in Public Health from the University of Copenhagen in 2012.

Dalsted further enhanced their education by pursuing a Master of Disaster Management degree from Københavns Universitet - University of Copenhagen from 2018 to 2019. During that same year, they also earned a certificate in Vulnerability and Capacity Assessment from Dhulikel Hospital, Nepal, and Copenhagen University. Additionally, Dalsted received a certificate in Children in Emergencies from RedR, UK, in 2019.
