Nicol Dwyer is an experienced operations leader in the hospitality industry, currently serving as Director of Operations and Head of Operations at Digbeth Dining Club since August 2021. Prior roles include General Manager at Dishoom (maternity cover), KERB Food (managing operations for Seven Dials Market), and Grind (overseeing the flagship site at London Bridge). Nicol also worked as Market Director for Street Feast, managing Dinerama and Dalston Yard, and held General Manager positions at All Star Lanes across multiple locations, as well as Carluccio's. Previous experience includes serving as Assistant General Manager at The Chicago Rib Shack. Nicol's education includes a Higher National Diploma in jewellery and silversmithing from the University of Birmingham and an improvisation jazz degree from the International College of Music.
