Xoel Cantero Alvarez is an experienced sommelier with a comprehensive background in the hospitality industry. Currently serving as Head Sommelier at Grupo Paraguas since May 2019, Xoel previously held significant positions such as Restaurant Manager, Beverage Director, and Head Sommelier at Salles Hotels, managing the wine programs of Michelin-starred restaurants. Prior to that, Xoel worked as Assistant Head Sommelier at Grupo Paraguas and as Head Sommelier at Akita Foods SL, developing extensive wine pairings and training staff on various beverages. Xoel's career also includes roles at renowned establishments like Quaglino's, The Typing Room, Maze by Gordon Ramsay, and Hakkasan Group. Xoel holds multiple certifications, including a Level 3 in Wine from the Wine & Spirit Education Trust, Certified Sommelier from the Court of Master Sommeliers, and Certified Sake Sommelier, demonstrating a solid educational foundation in wine and beverage expertise.
