Jean-Pascal Paubert is an esteemed professional in the wine and spirits industry, currently serving as the Directeur at the Bordeaux International Wines & Spirits Academy since September 2018, where workshops focused on wine, spirits, and gastronomy are organized. Since July 2015, Jean-Pascal has been a Sommelier and wine and spirits coordinator for MBA programs at VATEL BORDEAUX, facilitating visits and workshops. Jean-Pascal has an extensive background in Michelin-starred restaurants, having worked as sommelier at Relais Gourmand le Saint-James (2 stars), Restaurant Les Fontaines (1 star), and Claude Darroze (1 star). Education was completed at the Ecole d’hotellerie et restauration de Talence from 1976 to 1979.
