Jay Gilbert, PhD, currently serves as the Director of Scientific Programs & Career Pathways at the Institute of Food Technologists (IFT), where strategic oversight of in-person and digital experiences enhances member engagement and program development. Previously, Jay held the position of Manager, Divisions & Career Pathways at IFT, focusing on member value and career advancement initiatives. Academic experience includes graduate research at Purdue University on alternative applications of whey protein and a research fellowship at Swinburne University analyzing the biocompatibility of protein fibrils. Additional internships at ConAgra Foods, PepsiCo, and work at various research groups have reinforced expertise in food science and technology, while education includes a Ph.D. in Food Science and Technology from Purdue University and ongoing doctoral studies in Biomedical/Medical Engineering at Swinburne University.
