Darcy Ambrosio is an experienced culinary professional currently serving as Room Chef at J Resort since April 2024. Prior to this role, Darcy was Corporate Chef at A-Bay's Cantina LLC from August 2022 to January 2024 and held the position of Executive Chef at A-Bay's Island Grill from December 2020 to September 2022. Additional experience includes serving as Corporate Executive Chef at Island Flavor, Sous Chef at Daylight Mind Coffee Company, General Manager 3 at Sodexo, and various roles at A-Bay's Island Grill and Lucky Dragon Hotel & Casino. Darcy began a significant tenure as General Manager and Chef de Cuisine at The New Tropicana Las Vegas, spanning five years. Educational background includes studies at West Hawaii Community College and graduation from Konawaena High School in 1999.
