Following stints in the kitchens at Bukhara in Delhi and Zuma in London, Karam started JKS Restaurants with Jyotin in 2008, with the opening of Trishna. He is responsible for the creation of the Indian restaurants in JKS Restaurants, including Trishna, Gymkhana, Hoppers, Brigadiers and Motu. He also successfully led the kitchen teams of Trishna and Gymkhana to their first Michelin stars and Hoppers Soho to a Michelin Bib Gourmand.
