Founder/CEO at Juna

Jewel Zimmer has extensive work experience in the culinary industry. Jewel is the founder and CEO of Juna, starting in September 2019. Prior to that, they founded and served as the chef of {cocoa} from February 2009 to September 2017. During their time at {cocoa}, the brand gained national recognition and successfully entered the Japanese market. Jewel also co-founded Press 12 in September 2015, which focused on modern pastry concepts. Press 12 was later acquired by Jake Godby in the spring of 2016. Jewel began their career as a pastry chef at Cityzen from June 2004 to April 2006, and prior to that, they worked as an assistant pastry chef at Fifth Floor Restaurant in 2001.

Jewel Zimmer's education history includes various studies and certifications in the fields of wine, massage, pastry arts, and the art and science of food.

In 1994 to 1997, Jewel attended Vancouver Community College (VCC) and specialized in the Art and Science of Food.

From 1997 to 1998, Jewel attended Le Cordon Bleu Ottawa to focus on Pastry Arts and Chocolate.

In 2003 to 2004, Jewel attended the San Francisco School of Massage and Bodywork to obtain Swedish and Shiatsu massage certifications.

In 2014, Jewel pursued wine education and received a Level 1 certification from the Court of Master Sommeliers.

Jewel also holds an additional certification in Level 1 from the Court of Master Sommeliers.
