Laura Antrim Caskey

Laura Antrim Caskey is a Registered Dietitian Nutritionist with extensive experience in nutrition counseling, education, and community outreach. Currently working at Unity Care NW since September 2019, Laura focuses on outpatient nutrition counseling and curriculum development for group education classes. Prior roles include community nutrition educator at the University of Idaho, where Laura taught nutrition programs to students, and volunteer efforts at the Idaho Food Bank. Additionally, Laura has a notable background in photography, having founded Appalachia Watch and served as a staff photographer for The Indypendent, along with freelance work for prominent publications such as The New York Times and The New Indian Express. Academically, Laura holds a Bachelor of Science in Food and Consumer Sciences from the University of Idaho and a Master of Arts in Photojournalism from the University of the Arts London. Laura has also completed a specialization in Lifestyle Medicine from the American College of Lifestyle Medicine.
