Michael Wallace has a diverse work experience spanning several industries. Michael currently serves as the Culinary Director at Kinder's Premium Quality Seasonings & Sauces, where they are responsible for new product innovation and recipe development. Prior to this, they launched their own consulting business in 2020, providing product development expertise to various clients in the food industry, such as Clara Foods and Longeve.

From 2017 to 2020, Michael worked as the Culinary Research and Product Development Manager at Thomas Keller Restaurant Group, where they revamped and created formulas for consumer packaged products and managed product certification. Michael also played a key role in the development of plant-based egg product, Just Scramble, as a Product Development Manager at JUST.

Starting in 2007, Michael held multiple roles at Thomas Keller Restaurant Group, including Executive Sous Chef and Chef De Cuisine, where they led kitchen teams, created menus, and maintained relationships with suppliers. Michael began their culinary career as a Cook 1 at The Ritz-Carlton Hotel Company LLC in 2004 and later worked as a Tournant at Alinea Restaurant.

Throughout their career, Michael has demonstrated expertise in recipe development, product innovation, and managing kitchen operations.

Michael Wallace attended New England Culinary Institute from 1999 to 2001, where they obtained an Associate of Arts (A.A.) degree in Culinary Arts/Chef Training.
