John Matthews has a diverse work experience in the restaurant industry. John began their career as a Management Intern at Lettuce Entertain You Restaurants in 2013 and later worked as a Management Intern/Server in 2014. In 2015, they joined Lettuce Entertain You Restaurants as a Manager and held various managerial roles until 2018, including Operations. Since 2023, they have been working at Mambo Seafood Restaurants as the Vice President of Strategic Projects.
John Matthews received their Bachelor's Degree in Management and Strategic Communications from Miami University, where they attended from 2011 to 2015. John also spent a year studying Management, Strategic Communications, and Communications at the University of New Haven- CEA Barcelona in 2013. Prior to that, they graduated from New Trier High School in 2011.

Mambo began operating in the neighborhoods of Southwest and North Houston in the mid 1990’s with a menu of varied seafood dishes prepared with the best elements of traditional and innovative American, Latin and Pacific seafood cuisines.
