Nicolas Gautier is a seasoned culinary professional and entrepreneur with extensive experience in the restaurant industry. Currently serving as the proprietor of the Michelin-rated Auberge de la Grive since September 2023, Nicolas also owns M’Amour épicerie Paysanne et Local and Centr’Âl, focusing on local and shared dining experiences. In addition, Nicolas operates B’Ōcal, a takeout version of the Bistrot RG, which offers fresh and seasonal cuisine. The culinary journey includes ownership of the Bib Gourmand-recognized SAS Bistrot RG and the Michelin-starred Restaurant Nature, where Nicolas served as both proprietor and chef de cuisine from 2018 to 2024. With a background in culinary consultancy for brands such as Vorwerk Thermomix and Hotels Esprit de France, Nicolas Gautier holds a CAP BEP in Cuisine et salle from CFA Laon.
