Nobuaki Shirashoji, PhD, CFS, has extensive experience in the food science and dairy research sector, currently serving as the Head of Laboratory and holding various managerial roles at Morinaga Milk Industry since 2012, focusing on research and development for processed and natural cheeses. Previously, Nobuaki worked as a Research Associate at Morinaga from 2003 to 2012, contributing to product development in collaboration with notable brands. Additional experience includes a position as a Visiting Researcher at the University of Wisconsin-Madison and early work as a production line programmer for Morinaga. Nobuaki earned a PhD in Agriculture (Food Science) from the University of Tsukuba and a Bachelor’s degree in Biochemical Engineering from Tokyo University of Agriculture and Technology.
