Shayanti Minj, Ph.D., is an accomplished food scientist with a robust background in product development and innovation in the dairy and vegan food sectors. Currently serving as Product Development Manager at Nature's Fynd since December 2024, Shayanti previously held the role of Senior Food Scientist at EVERY™, where notable achievements included developing the award-winning precision-fermented vegan egg, featured at Eleven Madison Park. At Hooray Foods, Shayanti contributed to the creation of the award-winning vegan bacon and developed alternatives to traditional pork products. Shayanti's early research at South Dakota State University included a national award-winning project on a dairy-based dietary blend. Educational credentials include a Ph.D. in Dairy and Food Science, a Master's in Dairy Microbiology, and a Bachelor's in Dairy Technology.
