Eimear has worked at O'Brien Fine Foods, Follain Teo, Clover Hill Food Ingredients, Rowett Institute of Nutrition and Health, and the Food Safety Authority of Ireland. Eimear holds a Master of Public Health in Nutrition from University College Dublin, a Postgraduate Diploma in Business and Management from William J Clinton Leadership Institute at Queens, and a Bachelor of Science in Food Science from University College Dublin.
