Tom Mercer has a wealth of experience in various leadership roles within the hospitality industry. Tom started their career as a General Manager at The Chicago Rib Shack from 1998 to 1999, and then moved on to Chiquito Restaurant, Bar, and Mexican Grill, where they served as General Manager from 2000 to 2005. From 2005 to 2016, Tom worked at EAT., initially as a General Manager before transitioning into roles such as Operations Training Manager, Learning & Development Manager, and eventually becoming the Head of HR & Learning. At Coco di Mama, Tom held the position of Head of People from 2018 until 2020, during which they focused on educating managers and maintaining the company's culture as it expanded.
