Juan-David Ortiz Morales is an experienced engineer and researcher currently serving as a doctoral researcher at La Patisserie Numerique since June 2023, focusing on the study, development, and formulation of new products and processes for additive manufacturing in the food industry, specifically French pastry. Previously, Juan-David founded SUA Chocolate 3D, utilizing 3D printing technologies for personalized chocolate manufacturing. Experience also includes roles as a chemical engineer at Plast'If, where contributions involved additive manufacturing with recycled materials, and earlier positions in research and as an educator in popular science. Juan-David holds a master's degree in Product Environment from Université de Lorraine and a chemical engineering degree from Universidad Nacional de Colombia, among other qualifications, and is currently pursuing a Ph.D. in Engineering at Université de Lorraine until December 2026.
