Sarah Ellis has a diverse work experience that spans over several years. Sarah has had roles such as Director of Digital Development and Head of Digital Development at the Royal Shakespeare Company, where they created new artistic digital initiatives and partnerships. Sarah also worked as a Digital Producer and managed partnerships for various productions. Prior to their time at the Royal Shakespeare Company, they were a Head of Creative Programmes at Albany Theatre. Additionally, Sarah worked as a Programme Manager at Apples & Snakes, where they managed the national development programme and executive produced online artist commissioning projects. Earlier in their career, they held positions as a Development Coordinator at Apples & Snakes, PA to the Director of Operations and Chief Engineer at BBC World, and Presentation and Operations Co-ordinator and Broadcast Assistant at ITV Digital.

Sarah Ellis has a diverse education history. Sarah began their studies in 1995 at Goldsmiths, University of London, where they earned a Bachelor of Music degree in Music and graduated in 1998. Following this, they pursued further education at the same institution and obtained a Master of Music degree in Contemporary Music Studies, which they completed in 1999. In 2017, Sarah Ellis was honored by the University of Worcester and was named an Honorary Fellow in the Institute of Arts.
