Paul Gilchrist has an extensive background in the restaurant industry, holding various managerial positions in both well-known chains and independent businesses. Before joining Thunderbird Fried Chicken as CEO, Paul worked as an Interim Central Project & Productivity Manager at Carluccio's, Director of Retail at Brakspear, and in various management roles at Mitchells & Butlers. Prior to their career in the restaurant industry, Paul worked as an Engineering Technician for the London Fire Brigade & Metropolitan Police. Paul has a wealth of experience in operations, development, and management within the food and beverage sector.

Thunderbird Fried Chicken, originally set up in 2017 with the aim to ‘Make Fried Chicken Great Again’, and although its roots are in street food, in 2018 Trispan’s ‘Rising Stars Fund’ led by Robin Rowland invested in Thunderbird. Founder Matt Harris originally set up the BBQ Lab, winning the judges choice at the 2015 ‘Wing Fest’ before setting up Thunderbird and winning the People’s Choice in 2019. Thunderbird operate 3 versions; 4-wall sites, 3rd party/concessions and finally delivery only kitchens. At the heart of Thunderbird is great food and great people. All our chicken is halal, fresh and brined daily, marinade in buttermilk and spices, and breaded in our own seasoned flour, but what makes Thunderbird different are our sauces, from our awarding ‘Chipuffalo, through our signature Awesome Sauce, Chipotle Ketchup and Harissa Ranch’. We take traditional recipes, pick them apart ingredient by ingredient, make every element as good as it can be, and put it all back together. It's fried chicken and wings, but not as you know it.
