Sanjay Sighat has a diverse work experience spanning over several years. Sanjay started their career in 1991 as a Sous Chef at Le Meridien Hotel. After working there for five years, they moved on to become the Executive Chef at RED FORT RESTAURANT LTD for a year. Following this, they held the position of Head Chef at Chutney Mary's Indian Restaurant for two years. In 1999, they joined Mela Restaurant as the Head Chef, where they stayed for two years. In 2001, they began working at The Authentic Food Co. as the New Product Development Controller and Senior Development Chef, a role they held for 14 years. In 2015, they became self-employed and worked as a New Product Development Specialist. Finally, in 2017, they co-founded The Vegilantes.
