Tracy Polevoy

Tracy Polevoy has extensive experience in the restaurant industry, currently serving as the People Development Manager at Velvet Taco since August 2020. Prior to this role, Tracy held several positions, including Regional Training Manager of North Texas and Training Manager. Tracy's career began at California Pizza Kitchen, where from June 2010 to July 2020, the role of Assistant General Manager was undertaken after starting as a host. Tracy holds an Associate of Arts and Sciences degree in Culinary Arts/Chef Training from Utah Valley University, earned between 2008 and 2012.
