Emily Lyons is an accomplished legal professional with extensive experience in food safety and regulatory affairs. Currently serving as Senior Counsel for Food Safety & Quality Regulatory at ADM since February 2025, Emily has previously held significant roles at Husch Blackwell, where responsibilities included partnership and supervisory skills from March 2019 to February 2025, as well as serving as Senior Associate Attorney and Associate Attorney with a focus on policies and legal compliance. Prior to Husch Blackwell, Emily worked as an Associate Attorney at Michael Best & Friedrich LLP and as Director of Regulatory Affairs and Counsel for the International Dairy Foods Association. Emily began a legal career with an internship in Legal and Government Relations at the National Farmers Union. An academic background includes a Juris Doctor from Vermont Law and Graduate School and a Bachelor of Science degree from the University of Illinois Urbana-Champaign, emphasizing Animal Sciences and Environmental Economics and Law.
