Juan Pablo Viejo has extensive experience in various industries and roles. Starting in 2003, they worked as a Culinary Team member at the Ritz Carlton Golf Club and Spa. Juan Pablo then went on to become a Manager at the Ritz Carlton Hotel Arts in 2004, followed by an Assistant Manager role at the Ritz Carlton Hotel in 2005. In 2006, they joined MTV Networks Latin America as a Receivable Specialist. From 2007 to 2009, Juan Pablo owned and managed Andu Restaurant. Since 2010, they have been Vice President and Chief Operating Officer, and later Chief Operating Officer, at Easy Foods Incorporated. In addition to managing a food manufacturing facility and implementing new lines of business, they also led all legal transactions, conducted internal audits, evaluated financial reports, and monitored purchasing activities. From 2013 to 2019, they served as the SAP Project Manager for the company, overseeing the implementation of the SAP system and ensuring a successful transition.

Juan Pablo Viejo has a diverse education history. Juan Pablo obtained a Masters degree in Hospitality Management from ESADE in 2004-2005. Prior to that, they completed a Bachelors degree in Culinary Arts from the Florida Culinary Institute in 2003-2004. Juan Pablo began their undergraduate studies at Tulane University - A.B. Freeman School of Business in 1999 and graduated with a degree in Finance and Management in 2003. In addition to their formal education, Viejo has also obtained certifications such as "Crystal Reports 2013 Essential Training" from lynda.com in June 2015 and is a member of Mensa, an organization for individuals with high IQs.
