Senior Food Scientist at Picnic

Gabriella Mendes is a senior food scientist at Picnic. Gabriella has previous experience working as a project manager research scientist at the USDA and as a PhD food process engineering at Purdue University. Her experience has been focused on overseeing multiple projects to support food safety, quality, and commercial applicability of evolving technologies to modernize processes for the industry. Gabriella has also designed, led and executed solutions to extend shelf-life of juices and ensured that processes produced safe and stable products. In addition, they have conducted extensive laboratory bench top trials alongside data analysis leveraging SAS and MATLAB. Gabriella has also authored 3 first authors publications in high impact journals and co-authored publication with the Nutrition Department.

Gabriella Mendes received their PhD in Food Process Engineering from Purdue University. Gabriella also participated in an Exchange Program in Agricultural and Biological Engineering at the University of Illinois Urbana-Champaign. Mendes holds a Bachelor's degree in Food Engineering from Universidade de São Paulo.
