Eric Paulucci is an accomplished executive with extensive experience in the hospitality and foodservice sectors. Currently serving as Chief Operating Officer at HomeState since February 2025, Eric focuses on driving operational excellence and innovation in hospitality. Previously, as Principal Consultant at Eric Paulucci Consulting from November 2020 to February 2025, Eric specialized in enhancing operational efficiency and profitability for restaurant groups. Additionally, Eric founded Boot A(E)ffect, a holistic healing and coaching firm aimed at fostering personal and professional growth. Eric has held significant roles such as Vice President of Retail Operations at Salt & Straw and Vice President of Operations at sweetgreen. Eric holds a B.A. in Hotel/Restaurant Management from Washington State University.

Our flour tortillas are made to order, by hand, and served hot off the comal, etc. Our brisket, queso and salsas; are made from whole foods, in-house, every day. Our locations in Hollywood and Highland Park are filled with friendly people, great music and a Playa Vista location is slated to open in March, 2019.
