Sean Scottini is an accomplished hospitality professional with extensive experience in operations and management across high-profile establishments. Currently serving as Operating Partner and Director of Operations at Le Bilboquet since February 2022, Sean has also acted as President of Successful Hospitality Consulting since March 2017. Previous roles include Manager for the Thomas Keller Tak Room opening team and Director of Food and Beverage at Spring Place, a membership club for influential professionals. Sean's career also features positions as Restaurant Director at Giorgio Armani USA and Director of Restaurants at Gordon Ramsay's The London Hotel. Earlier experience includes General Manager at MEGU Restaurants. Sean holds a Technical Degree in Chemistry from New York University and I.T.I.S Bergamo Italy.

Le Bilboquet
After closing the original iconic 35-seat restaurant that started it all, Le Bilboquet reopened on East 60th Street in New York City, keeping the simple yet exclusive bistro feel. The picturesque Sag Harbor location came four years later. Le Bilboquet has outposts in Atlanta, Dallas, Denver and Palm Beach. In New York City you can also find the gorgeous Fleming and the petít Café Bilboquet.
