Lewis Carolan has a diverse background in the culinary arts, with experience spanning various roles in kitchen management and culinary development. Most recently, Lewis served as Kitchen Operations Manager at Spicer + Cole from July 2023 to March 2024. Prior to this, Lewis worked as Senior Baker and Pastry Chef at Marks Bread from June 2022 to June 2023, and as Development Chef at The Cosy Club - Loungers from October 2021 to May 2022. Lewis held the position of Head Chef at Bakesmiths and Bakehouse from September 2019 to September 2021, and was a Senior Chef de Partie at The Cosy Club from August 2018 to September 2019. Previous roles include Kosher Catering and Front of House Manager at Belong Morris Feinmann and a Graphic Design Intern at Brainfeed. Lewis's early career included positions as a Bartender at ASK Italian and Building Warden at Hello Student. Lewis holds a Bachelor's degree in Illustration from Falmouth University, where studies were completed from 2013 to 2016, and attended Xaverian College from 2010 to 2013.
